I thought I hit the jackpot when I found this recipe. Gluten free pancakes? Say what? With bananas? It’s practically part of your 5 a day. Glorious. Have a look below to see how easy it is.

Mash the ripe bananas using the back of a fork to create a mash. Add the egg to the banana mash. I added a pinch of cinnamon, just because.

Turn the heat on the stove to very high and heat a little Flora Cooking Liquid – this stuff is amazing for pancakes because it is flavourless and doesn’t change the flavour of your food. It was out of stock for a while, but it looks like it’s back in action at supermarkets like Smart and Pama. I poured the liquid in a glass jar just to be fancy, but I’m adding a photo of the product for your reference.

Fry just like any other pancakes and top with your favourite indulgence.
