Ingredients

125gr Blueberries
2 Bananas ripe
125gr Plain Flour
75gr Wholemeal Flour
200gr Oats
75gr Brown Sugar
250ml Milk
2 Eggs Separated in whites & yolks
1 tsp Cinnamon
3 tsp Chia Seeds
3 tsp Stork Melted
3 tsp Baking Powder
1 tsp Salt

Blueberry & Banana Breakfast Muffins with Chia Seeds

There is a bright side to mornings, and that is when I dedicate my evenings baking goodies with plenty of left overs to enjoy the next day.

I love making breakfast goodies because a) they usually come in a healthier version of a delicious dessert and b) because nobody has time to prepare breakfast in the morning on most sane mornings.

Steps

I begin by preheating the oven to 200°C, unless it has been going on for hours baking other goodies. In a large mixing bowl, combine all the dry ingredients and create a well.

I then add the bananas, egg yolks, milk and melted Stork butter (I just LOVE Stork for baking. Apart from doing wonders to create soft cakes, it also brings back so many memories of me baking the classic vanilla Bundt cake with my nanna, bless her). Mix everything until a wet batter forms.

In a separate bowl, I whisk the egg whites until they form soft peaks and then fold together with blueberries into the muffin batter.

I then pour the mixture into a well-oiled muffin tin or into individual paper cases and bake for about 30 minutes, or until a toothpick comes out clean. The blueberries will burst and you’ll end up with beautiful purple muffins full of goodness.

Let the muffins cool completely before serving. They remain fresh for about 3 days.
