Ingredients

2 tbsp Maille Wholegrain Mustard
1 tbsp Maille Dijon Mustard
6 Eggs
350gr Pork mince
1 tbsp Olive oil
For the coating
3 Eggs
2 tbsp Maille Wholegrain Mustard
50ml Milk
100ml Flour (plain)
300gr Breadcrumbs

Mix together the mince meat, olive oil and mustards.

To boil the eggs to perfection: Place the eggs (at room temperature) in cold water and bring to boil. Once boiling, let it boil for 10 minutes. Then place them in bowl with iced water for 10 minutes.

For the coating: Whisk the eggs, the Maille Wholegrain Mustard and the milk together. Take the meat and roll each piece into a flat pancake. Wrap each boiled egg in the meat, making sure it is covered all over.

Then, one by one, I roll them in flour and shake off any excess; dip in the eggs mix, followed by the breadcrumbs and then repeat.

Once done, drizzle with olive oil and bake in the oven at 180C for 15-20 minutes.
