4 cups Boiling water
1 cup Granulated Sugar
1/4 tsp Gluten free baking soda
1 1/2 cups Peach Nectar

Easy Homemade Peach Iced Tea

Once you start making things homemade, you really don’t go back. Making homemade iced tea sounded very intimidating previously, and quite frankly, a waste of time as you never really get that San Benedetto taste. That’s until I came across this recipe. I have come up with a few shortcuts that bring that lucious fresh taste of iced tea without drinking your body weight in sugar and the results are fabulous. Originally, the recipe called for 12 tea bags, but after trying it a few times, I think 8 should be enough. I like to use PG Tips with those cleverly designed pyramid bags that give the tea more room to move, to create that traditional taste of the cuppa tan-nanna. This recipe makes 4 litres of peach iced tea.

Place the tea bags in a glass bowl. Bring 4 cups of water to a boil and add to the tea bags. Let the tea steep for about 10 minutes.

Once done, I remove the tea bags and add the sugar, stirring until dissolved. I then add the baking soda and peach nectar and whisk again forming little bubbles.

The iced tea is now basically done, it just needs that final fermentation. I pour the tea mixture into a large pitcher and stir in 10 cups of ice water. I finish it off with 1-2 tablespoons of freshly squeezed lemon juice to balance out the sweetness and a few slices of fresh peaches.

Fill a glass or mason jar full with ice and serve.
