Easy Low-Carb Lemon Chicken Quinoa Salad

Cook the quinoa as per packet instructions – or in 2 cups of cold water. I usually add a Knorr Chicken Cube to flavour the grain.

Once cooked, place the quinoa in a large glass bowl and let it cool. Then, add all the remaining ingredients, mixing gently.

Best served cold. You can make it in batches and store in the fridge for up to a week.
