This recipe is the epitome of how you can make veggies attractive & delicious, especially for kids. Feel free to mix & match any of your favourite veggies. Go outside your comfort zone and try adding healthy veggies like kale and chard, which you might not otherwise have on their own. This is a great way to conceal them! shhh!

Steps

1
Done

I begin my chopping up all the ingredients. I suggestion you follow this combo: 2 parts colours (bell peppers etc) plus one part green (spinach, kale or chard).

2
Done

I use Flora Pro Activ Buttery as a healthy alternative in recipes when I need a hefty amount of butter, but this amount really is necessary. So I begin by melting a tbsp of butter in a dish, in a preheated oven. Then, I add all the veggies and let them sauté. Once they’ve started to take some colour, I add the spinach and after a couple of minutes, I pour in the beaten eggs. You may also add a dash of milk in the egg mixture before pouring.

3
Done

Let it set for about 15 minutes and then top with mozzarella. Once melted, your veggie quick dinner is done! That’s practically your 5-a-day on one dish!

The Cook

I will be sharing with you my daily experiences with food, whether that’s shopping for the right ingredients, understanding products and sharing with you simple culinary skills that I have learnt along the way. My mission is to make food preparation more enjoyable and rewarding.
