This recipe is the epitome of how you can make veggies attractive & delicious, especially for kids. Feel free to mix & match any of your favourite veggies. Go outside your comfort zone and try adding healthy veggies like kale and chard, which you might not otherwise have on their own. This is a great way to conceal them! shhh!

2 Done | I use Flora Pro Activ Buttery as a healthy alternative in recipes when I need a hefty amount of butter, but this amount really is necessary. So I begin by melting a tbsp of butter in a dish, in a preheated oven. Then, I add all the veggies and let them sauté. Once they’ve started to take some colour, I add the spinach and after a couple of minutes, I pour in the beaten eggs. You may also add a dash of milk in the egg mixture before pouring. |
