- 2 Salmon fillet
- Yellow Bell Pepper
- Red Bell Pepper
- 1 cup Spinach
- 1 Onions
- 1 tsp Lemon juice
- Lemon zest1/2 lemon
Colourful dinners are my favourite, especially if they’re as straightforward as this grilled salmon on warm salad, dressed in a zesty decadent sauce.
I begin by grilling the salmon for 2 minutes on each side and then place in the oven for another 15 minutes at about 160C. Then, I saute together the sliced onions and bell peppers. Once cooked, I add the wilted spinach leaves and cook for another 5 minutes, flipping the veggies constantly.
Serve by placing the warm salad at the bottom of the plate, then place the grilled salmon and finally dress with the zest sauce. Can be served warm or at room temperature.
