Grilled Veggies & Halloumi Salad in Tortilla Bowl

1 tbsp Apple Cider Vinegar
1 tbsp Maille Dijon Mustard
1 tbsp Honey
1/4 cup Olive oil
150gr Halloumi
Mixed Green Leaves
1 Courgette sliced
1 Aubergine sliced
Salt & pepper

Grilled Veggies & Halloumi Salad in Tortilla Bowl

I’ve recently seen these tortilla bowls and I just had to try them. I was preparing a dinner for one on a weeknight, as my husband had a business dinner, so I decided to play around in the kitchen and make myself a pretty meal. Mission accomplished! I made a grilled veggie salad with a sweet Dijon mustard vinaigrette, using the french brand Maille.

I begin by oiling a round baking tray that I usually use for small cakes, and gently place the tortilla in the form of a bowl. Bake for about 8 minutes until it browns & let it cool.


I then cut up my veggies up in whatever shape or form I desire and I lightly spread some olive oil on them before I place them on a hot grill, until grill marks form on each side. Season with salt & pepper. I do the same with the halloumi, olive oil and fry.


For the dressing, I mix the Maille Dijon Mustard (I love this French brand, the Dijon is mild if you don’t like that strong mustard taste), together with the honey, vinegar, olive oil, and season with salt and pepper.


Time for plating! I place the tortilla bowl on a serving dish, fill green leaves, dress the salad with grilled veggies and the halloumi, and pour over the dressing on top of everything. You can add some lemon zest to taste. Damn this looks pretty!
