Who would have thought that watermelons can be grilled? I certainly didn’t. It’s such an interesting and different side dish that can be served as an alternative snack during aperitivo. Using everyday ingredients like extra virgin olive oil, sea salt and freshly ground pepper, makes this side dish super doable and rather impressive. You can experiment with different flavours and I suggest leaving the seasoning to your guests so that they can adjust according to their taste. Let me know if you tried this one!

Preheat the grill to medium-high heat, making sure it’s clean and oiled.

Drizzle the watermelon slices with extra virgin olive oil and place directly on the gill, leaving them in place for a while to get grill marks and to let them caramelise. You’d need to leave them on the grill for about 4 minutes on each side.

Remove from the grill and place on an appropriate dish. Season with sea salt, freshly ground black pepper and crumbled the feta cheese. Serve slightly chilled. Yum!
