Ingredients

Halloumi
Red Bell Pepper Or any grilled veg
Green peppers Or any grilled veg
Pita bread (brown) Or white
Tomatoes
Hummus
3 tbsp Hellmann's Honey & Mustard Dressing
2 Garlic cloves
2 cans Chickpeas
1/2 cup Olive oil
1 tbsp Tahini Optional

Halloumi Pita Pockets with Honey Mustard Hummus Dressing

The recipe contains a honey mustard hummus dressing that can be served separately as a dip – so yum!

Steps

I begin by slicing the halloumi into 1/2 inch slices and grill on medium/high heat for at least 3 minutes on each side. Once done, lower the heat and lightly heat the pita bread.

To make the hummus: In a food processor, beat together the chickpeas, olive oil, garlic cloves, tahini (if using) and the Hellmann’s Honey Mustard Dressing, until smooth.

To assemble the pita (this is where kids can help out): Cut out the top part of the pita bread to create pockets, spread the hummus dressing, then insert the grilled veg, tomatoes and halloumi (sliced into bite-sized chunks) and finish off with another dollop of hummus dressing. Enjoy!
