6 PG Tips tea bags
1/4 tsp Baking Soda
1/2 cup Lime juice
1/2 cup Granulated Sugar
12 Mint leaves

We’ll call it lemon iced tea, let the kids call it ‘Mojito’ !

I begin by boiling 2 cups of water and then pour over the PG Tips tea bags in a small bowl. Add the baking soda and let steep for 15 minutes.

Next, in a small sauce pan, I mix the sugar with ½ cup water and heat over high heat until the sugar is dissolved. Then, remove from heat and add the mint leaves. Let cool for 10 minutes, straining out mint leaves once cooled.

Grab a large jug and a long wooden spoon. In the jug, mix together the tea, the cooled syrup, lime juice and 7 cups of cold water. Stir well and serve over ice & fresh mint.
