Most of us are used to the practicality of chicken breasts, but I recently found out that chicken thighs can be a great alternative. Recipe includes a quick marinade to soak the chicken in & leave in the fridge – so that when you get home, dinner is half done! Yes, please.

Once marinated, grill the thighs for 2/3 minutes on each side. Serve with roast vegetables contorni.
