Who doesn’t love some good old fish & chips?! I wanted to create a lighter version and I think I succeeded! Each cod serving contains about 290 calories and at least 40gr of protein.

Begin by drying the cod fillets between kitchen towels, this will help the flour stick to it better when we begin the batter process. Create 3 mini work stations by placing the flour and sea salt in a plate, then another for the breadcrumbs and another for the egg whites. For a boost of flavour I crumble a Knorr Fish Cube into the breadcrumbs. Beat the egg whites until they foamy.

Begin by coating the cod fillets with the seasoned flour, shaking off the excess. Then, dip the cod into the egg whites, and finally coat with the flavoured breadcrumbs, patting on crumbs to cover. Arrange cod on a baking sheet and place on the lowest rack in oven and bake for about 15 minutes.

The end result should be opaque, soft fish on the inside and golden brown on both sides by turning over once halfway through cooking. For the sauce, I mix together a tablespoon of the delicious Colman’s Tartar sauce with lemon zest.
