One pot sausage stew

There are a few things more comforting than a stew in the depths of winter, but sometimes you do not have all the time in the world to make one. Hope you like this easy one!

Chop the carrots, potatoes (with skin on), onions, and sausages into chunky pieces. Place them all in a terracotta oven dish.

Dissolve a stock cube into about 500ml of warm water - for this recipe I use Knorr Less Salt Vegetable Cube since most sausages are already quite salty. Add the bay leaves, cover with thin foil and cook in a preheated oven at 180C for about 40 minutes. Uncover and cook for another 10 minutes until golden brown.
