small bunch Mint leaves
4 tbsp White Balsamic Vinegar

Paccheri is a great pasta to serve with fish as it absorbs most of light stock and let the fish have its moment to shine. I recommend you use fresh tuna with this recipe.

I begin by grilling the tuna steaks with a drizzle of olive oil & cook the paccheri until al dente in salted boiling water.

Heat some olive oil in a large pan and fry the chopped onions until they're soft, then add the chilli flakes.

To make the stock, place the Knorr Fish Cube in a jug and top with about 250ml of hot water and whisk.

Turn on the heat, add the white balsamic vinegar, fish stock and cubed grilled tuna onto the pan and let it reduce. Finally, add the pasta to the sauce and stir in the pan for 2 minutes. Garnish with mint leaves and serve.
