- 1/3 cup Orange zest
- 1/3 cup Sage leaveschopped
- 1/3 cup Bay leavescrumbled

Dress to impress… your table that is! This Holiday Main Dish is sure to look good as a centrepiece!
In a mortar and pestle, crush together the olive oil, sage leaves, orange zest and dried bay leaves. Season the meat with salt and pepper and then rub the mixture all over. Cover and refrigerate for at least 4 hours, ideally overnight.
When ready to roast, bring the meat out at least an hour before to let it come to room temperature. In the meantime, preheat the oven to 250C. Place the meat on a roasting dish, with the fat side up. Start by roasting for 30 minutes and then reduce the heat to 200C and roast for another 45 minutes for medium. Let it roast for another 15 minutes if you prefer the meat cooked through.
Let it stand for at least 20 minutes before serving. In the meantime, prepare the gravy. Place a Knorr Beef Gravy Pot & 280 ml of warm water into a saucepan on medium heat, whisk continuously. When it reaches a boil, let it boil for 1 minute. Gently slice the meat and serve the hot gravy over it. Enjoy!
