Sliced Ribeye Roast with a Caramelised Onion Gravy

I begin my browning the seasoned meat by roasting in a preheated oven at 260°C for about 30 minutes.

Once done, I place the onions alongside the meat, reduce the heat to 165°C and roast again for another 1hour or a little more if you prefer your meat cooked more than medium.

Once done, transfer the meat onto a cutting board and cover with foil. Place the onions in a pan, pour over the wine and flavour with the Maille Dijon Mustard. When ready to serve, slice the meat in medium-thickness and serve with the warm gravy.
