200gr Wholemeal Flour You may use white flour
100gr Maple Syrup You may use Agave Syrup
25gr Olive oil
1tsp Ground ginger
1 tsp Cinnamon
1 tsp Bicarbonate of Soda
1 Eggs

Disclaimer: they’re obviously sugar free if you skip the icing decoration ūüôā I found this recipe on my favourite food magazine Taste & Flair – the December issue. This is an ideal treat for those who, like me, love Christmas stuff but don’t have much of a sweet tooth. The ingredients are simple and so is the method. The recipe originally called for 1 tsp of ground ginger, but I would add an extra 1/2 for that spicy tinge.

In a glass bowl, I sift together the flour, cinnamon, ginger and bicarbonate of soda. Then I add the olive oil and the syrup. Originally, the recipe did not include an egg, but I felt like my mixture needed it to mould together into a dough.

Once the dough is formed, roll it out on a well-floured surface and cut out whatever shapes you have in the kitchen.

Arrange them on a baking tray, lined with baking paper, and bake for about 12 minutes at 180C. Let them cool completely before piping with Royal Icing.
