Ingredients

1 cup I Can't Believe It's So Good
3 Bananas Ripe
3/4 cup Brown Sugar Light
2 Eggs
1 tsp Vanilla essence
2 cups Flour (plain)
1 tsp Baking Soda
1 tsp Cinnamon
1/4 tsp Salt

Super Moist Banana Bread

A friend of mine masters the banana bread and I’ve been begging for the recipe for ages! FINALLY she shared it with me, along with her secret weapon – the type of butter she uses! Who knew it made such a difference?! You can add a cup (or two) of chocolate chips should you so desire, but I wanted to try it the original way. Let me know if you try any other variations.

Preheat oven to 180°C, line a loaf tin with parchment paper. In large bowl, I begin by mashing the banana, the more ripe they are, the easier it is to mash.

I then add the remaining ingredients: I Can't Believe It's So Good spread, brown sugar, eggs and vanilla. Stir well, and add the rest until well blended.

Time to bake! Spoon it all into the loaf tin and bake for between 45 and 60 minutes (depending on your oven). Poke the cake with a toothpick and when it comes out clean, it's done! Cool for about 20 minutes before slicing.
