Ingredients

3 Bao Buns Steamed from frozen
For the filling
300gr Mushrooms Thinly sliced
1 inch Grated ginger
4 Garlic cloves
3 tbsp Soy sauce light
1 tbsp Sesame oil
1 tbsp Light brown sugar
To serve
5 tbsp Hellmann's Vegan Mayo
1 Carrots Thinly sliced
1 Spring Onions Thinly sliced
1 tbsp Black sesame seeds

Now you can make Bao Buns at home too! Don’t feel intimidated, these can be easily found in local Asian shops.

Preheat the oven to 200C/180C Fan/Gas 6. In a bowl, I begin by mixing the mushrooms, ginger, garlic, soy sauce, brown sugar and salt. Then, I add 1 tablespoon of water to loosen the mixture and marinate for 10 minutes.

Tip the mixture onto a baking tray and bake for about 20 minutes or until the mushrooms are cooked.

Meanwhile, line the bamboo steamer with baking paper, then place three or four buns inside each basket. If you don’t have a bamboo steamer (like me) I simply poured some water in a big pot, placed a metal colander on top and closed it with a lid and voilà! Steam for 6–7 minutes, until fluffy and dry to touch.

In a separate bowl, mix together the shredded carrot, the Hellmann’s Vegan Mayo and the spring onions (or leeks).

Fill each bao bun with the mushroom mixture and then top with the yummy mayonnaise mixture. Scatter about ½ teaspoon of black sesame seeds to decorate. Amazing!
