1 tsp Vanilla essence
50gr White Chocolate Shavings
100gr Strawberries

White Chocolate Strawberry Ice Cream Cake

This recipe has everything you love in a dessert: white chocolate, a creamy texture and fresh fruit! You may expert with some layers of sponge cake or serve this with a good portion of fruit.

Using an electric mixer, I begin by whisking the Elmlea Double until it’s soft but holds its shape. Half way through I add the vanilla and continue whisking. You may also add about half a cup of icing sugar, but this is entirely optional.

Once done, grab a spatula and fold in the white chocolate shavings and the strawberries, very gently.

Grab a cake mould, I especially love these silicon ones as it makes taking it out much easier. Spread the mixture evenly and freeze for at least 4 hours. Enjoy!
